Vegan coconut butter is a dairy-free alternative to butter made with coconut oil. It is one of the best types of vegan Butter. You can make it nut-free if you are allergic to nuts.

Equipment

  • 1 high speed blender
  • 1 container

Ingredients
  

  • ½ cup soy milk
  • 1 cup refined coconut oil
  • 2 tablespoon neutral oil, such as sunflower oil, safflower oil
  • 1 teaspoon apple cider vinegar
  • 11/2 teaspoon nutritional yeast
  • ¼ teaspoon sea salt
  • 1/3 cup raw cashews soaked

Instructions
 

  • Take all ingredients and add all of them into a blender.
  • Blend them for 2 to 3 minutes. After that give it 1 minute rest and blend them one more time for 1.5 minutes.
  • After your mixture is ready pour the butter into a rectangular container or any container you like.
  • Cover your container nicely. Keep it on the fridge for 6 to 7 hours to allow it to set properly.
  • After 6 to 7 hours remove it from the fridge, use it according to your need and put it back.

Notes

  • You can store it for 2 weeks in the fridge 
  • Use refined coconut oil for best results
