Notes

  • Vital wheat gluten is a key ingredient in making seitan. It’s a protein-rich flour that gives seitan its meaty texture. If you can’t find it at your local grocery store, you can purchase it online or at health food stores.
  • Nutritional yeast is another important ingredient that gives the seitan its savory, umami flavor. It’s also a good source of B vitamins.
  • Liquid smoke is a natural flavoring that gives the seitan ribs a smoky flavor without the need for an actual smoker. You can find it at most grocery stores.
  • Be sure to knead the seitan dough well to develop its elasticity. This will help give the ribs a chewy texture.
  • Simmering the seitan ribs in water before grilling them helps to ensure that they are cooked through and tender.
  • Feel free to adjust the number of spices and seasonings to your liking. If you like your BBQ sauce spicier, add more smoked paprika or a pinch of cayenne pepper.
  • You can also bake the seitan ribs in the oven instead of grilling them. Simply brush them with BBQ sauce and bake them at 375°F for 20-25 minutes, until they are browned and crispy.
  • Serve the seitan ribs with your favorite BBQ sides, such as corn on the cob, coleslaw, or baked beans.
