How To Make Vegan Lasagna:-

INGREDIENTS  

  • 1 box lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion chopped
  • 2 garlic cloves minced
  • 2 cups sliced mushrooms
  • 2 cups spinach leaves
  • 1 (28-ounce) can crush tomato
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 cup raw cashews
  • ½ cup water
  • 1 tablespoon lemon juice
  • 2 cups vegan mozzarella cheese, shredded fresh parsley, for garnish
  • Salt and pepper, to taste
  • 40 g Nutritional Yeast
  • 23 g Tofu

INSTRUCTIONS 

Preheat the oven to 375°F. Cook your lasagna noodles according to package instructions, then drain and set aside.

Take a large pot and olive oil, and heat it over medium-high heat. Add chopped onion and garlic, and cook for 2-3 minutes until the onion is translucent.

Add the crushed tomatoes, tomato paste, dried oregano, dried basil, dried thyme, salt, and pepper to the pot. Stir them and let simmer for 15-20 minutes.

Take a separate bowl to mix the crumbled tofu, nutritional yeast, chopped parsley, salt, and pepper. Spread a thin layer of the tomato sauce on the bottom of a 9×13-inch baking dish. Add a layer of cooked lasagna noodles on top of the sauce. Spread a layer of the tofu mixture on top of the noodles. Add a layer of spinach leaves and mushrooms on top of the tofu mixture.

Repeat these steps 7-9 until all the ingredients are used up, ending with a layer of noodles. Spread the remaining tomato sauce on top of the lasagna. Sprinkle vegan mozzarella cheese on top of the sauce.
